Margarita Chicken

Margarita Chicken

Ingredients
1 can (10 ounces) frozen non-alcoholic margarita mix, thawed
3 tablespoons lime juice
3 garlic cloves, minced
4 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper

Directions
In a small bowl, combine the margarita mix, lime juice and garlic. Pour 1 cup marinade into a large resealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for 2-4 hours. Cover and refrigerate remaining marinade.

Drain and discard marinade. Sprinkle chicken with salt and pepper. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.

Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160°, basting frequently with reserved marinade. Yield: 4 servings.

Parmesan Chicken with Artichoke Hearts

Parmesan Chicken with Artichoke Hearts

Ingredients
4 boneless skinless chicken breast halves (6 ounces each)
3 teaspoons olive oil, divided
1 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
1/2 teaspoon pepper
2 cans (14 ounces each) water-packed artichoke hearts, drained and quartered
1 medium onion, coarsely chopped
1/2 cup white wine or reduced-sodium chicken broth
2 garlic cloves, chopped
1/4 cup shredded Parmesan cheese
1 lemon, cut into 8 slices
2 green onions, thinly sliced

Directions
Preheat oven to 375°. Place chicken in a 15x10x1-in. baking pan coated with cooking spray; drizzle with 1-1/2 teaspoons oil. In a small bowl, mix rosemary, thyme and pepper; sprinkle half over chicken.

In a large bowl, combine artichoke hearts, onion, wine, garlic and the remaining oil and herb mixture; toss to coat. Arrange around chicken. Sprinkle chicken with cheese; top with lemon slices.

Roast 20-25 minutes or until a thermometer inserted in chicken reads 165°. Sprinkle with green onions. Yield: 4 servings.

Crunchy Peanut Bark

Crunchy Peanut Bark

Ingredients
2 pounds white candy coating, coarsely chopped
1 cup peanut butter
3 cups crisp rice cereal
2 cups dry roasted peanuts
2 cups miniature marshmallows

Directions
In a microwave, heat candy coating at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Stir in remaining ingredients. Drop by heaping tablespoonfuls onto waxed paper. Let stand until set. Yield: 10 dozen.

Editor’s Note: White confectionery coating is found in the baking section of most grocery stores. It is sometimes labeled “almond bark” or “candy coating” and is often sold in bulk packages of 1 to 1-1/2 pounds.

Vegetable Noodle Casserole

Vegetable Noodle Casserole

Ingredients
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1-1/2 cups 2% milk
1 cup grated Parmesan cheese, divided
3 garlic cloves, minced
2 tablespoons dried parsley flakes
1/2 teaspoon pepper
1/4 teaspoon salt
1 package (16 ounces) wide egg noodles, cooked and drained
1 package (16 ounces) frozen California-blend vegetables, thawed
2 cup frozen corn, thawed

Directions
Preheat oven to 350°. In a large bowl, combine soups, milk, 3/4 cup cheese, garlic, parsley, pepper and salt. Stir in noodles, vegetable blend and corn.

Pour into a greased 13×9-in. baking dish. Sprinkle with remaining cheese. Cover and bake 45-50 minutes or until heated through. Yield: 12-14 servings.

Slow-Roasted Chicken with Vegetables

Slow-Roasted Chicken with Vegetables

Ingredients
2 medium carrots, halved lengthwise and cut into 3-inch pieces
2 celery ribs, halved lengthwise and cut into 3-inch pieces
8 small red potatoes, quartered
3/4 teaspoon salt, divided
1/8 teaspoon pepper
1 medium lemon, halved
2 garlic cloves, crushed
1 broiler/fryer chicken (3 to 4 pounds)
1 tablespoon dried rosemary, crushed
1 tablespoon lemon juice
1 tablespoon olive oil
2-1/2 teaspoons paprika

Directions
Place carrots, celery and potatoes in a 6-qt. slow cooker; toss with 1/4 teaspoon salt and pepper.

Place lemon halves and garlic in chicken cavity. Tuck wings under chicken; tie drumsticks together.

Place chicken over vegetables in slow cooker, breast side up. Mix rosemary, lemon juice, oil, paprika and remaining salt; rub over chicken.

Cook, covered, on low 6-8 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°; and vegetables are tender.

Remove chicken to a serving platter; tent with foil. Let stand 15 minutes before carving. Serve with vegetables. Yield: 6 servings.

Avocado Crab Boats

Avocado Crab Boats

Ingredients
5 medium ripe avocados, peeled and halved
1/2 cup mayonnaise
2 tablespoons lemon juice
2 cans (6 ounces each) lump crabmeat, drained
1/4 cup chopped fresh cilantro, divided
2 tablespoons minced chives
1 serrano pepper, seeded and minced
1 tablespoon capers, drained
1/4 teaspoon pepper
1 cup (4 ounces) shredded pepper jack cheese
1/2 teaspoon paprika
Lemon wedges

Directions
Preheat broiler. Place two avocado halves in a large bowl; mash lightly with a fork. Add mayonnaise and lemon juice; mix until well blended. Stir in crab, 3 tablespoons cilantro, chives, serrano pepper, capers and pepper. Spoon into avocado halves.

Transfer to a 15x10x1-in. baking pan. Sprinkle with cheese and paprika. Broil 4-5 in. from heat 3-5 minutes or until cheese is melted. Sprinkle with remaining cilantro; serve with lemon wedges. Yield: 4 servings.

Editor’s Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

Cookies-and-Cream Cake

Cookies-and-Cream Cake

Ingredients
1 package white cake mix (regular size)
1-1/4 cups water
1/3 cup canola oil
3 large egg whites
1 cup coarsely crushed Oreo cookies (about 8)

FROSTING:
1/2 cup shortening
4 to 4-1/2 cups confectioners’ sugar
1/4 cup milk
1 teaspoon vanilla extract
Oreo cookies and crushed Oreo cookies, optional

Directions
In a large bowl, combine the cake mix, water, oil and egg whites; beat on low speed for 30 seconds. Beat on high for 2 minutes. Gently fold in crushed cookies.

Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

For frosting, beat the shortening, sugar, milk and vanilla in another large bowl until smooth. Spread frosting between layers and over top and sides of cake. Decorate the top with cookies and the sides with crushed cookies if desired. Yield: 12 servings.

Elegant Pork Marsala

Elegant Pork Marsala

Ingredients
1/3 cup whole wheat flour
1/2 teaspoon pepper
6 boneless pork loin chops (4 ounces each)
1 tablespoon olive oil
2 cups sliced fresh mushrooms
1/3 cup chopped onion
2 turkey bacon strips, chopped
1/4 teaspoon minced garlic
1 cup Marsala wine or additional reduced-sodium chicken broth
5 teaspoons cornstarch
2/3 cup reduced-sodium chicken broth

Directions
In a shallow bowl, mix flour and pepper. Dip pork chops in flour mixture to coat both sides; shake off excess.

In a large nonstick skillet coated with cooking spray, heat oil over medium heat. Add pork chops; cook 4-5 minutes on each side or until a thermometer reads 145°. Remove from pan; keep warm.

In same skillet, add mushrooms, onion and bacon to drippings; cook and stir 2-3 minutes or until mushrooms are tender. Add garlic; cook 1 minute longer. Add wine; increase heat to medium-high. Cook, stirring to loosen browned bits from pan.

In a small bowl, mix cornstarch and broth until smooth; add to pan. Bring to a boil; cook and stir 2 minutes or until slightly thickened. Serve with pork. Yield: 6 servings.

Pineapple Pound Cake

Pineapple Pound Cake

Ingredients
1 can (20 ounces) sliced pineapple
2/3 cup packed brown sugar
1/4 cup butter, cubed
9 maraschino cherries, halved
Pecan halves, optional
4-1/2 cups pound cake batter(below)

Directions
Drain pineapple, reserving 1 tablespoon juice; set aside (discard remaining juice or save for another use). In a saucepan over low heat, cook and stir brown sugar and butter until sugar is dissolved; add the reserved pineapple juice. Pour into an ungreased 13-in. x 9-in. baking dish.

Cut pineapple slices in half. Arrange in a single layer in three lengthwise rows, alternating the direction of each row. Place a cherry, cut side up, between each pineapple slice. If desired, place pecan halves around the sides of the dish. Carefully spoon batter over the top and spread gently. Bake at 350° for 40 minutes longer or until a toothpick inserted into the cake near the center comes out clean. Immediately invert onto a serving platter. Cool. Yield: 12 servings.

Pound Cake Ring

Ingredients
1 pound butter, softened
3 cups sugar
6 eggs
1/2 cup plus 1 tablespoon milk
1 tablespoon lemon juice
1-1/2 teaspoon vanilla extract
1 teaspoon grated lemon peel
1/2 teaspoon lemon extract
4 cups cake flour
1/2 teaspoon salt
1/2 teaspoon baking soda
Confectioners’ sugar, fresh peaches, blackberries and mint, optional

Directions
Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Combine milk, lemon juice, vanilla, lemon peel and extract. Combine flour, salt and baking soda; add to creamed mixture alternately with milk mixture, beating well after each addition.

Pour 4-1/2 cups of batter into a greased and floured 10-in. fluted tube pan. (Use the remaining batter to prepare a second pound cake.)

Bake 15 minutes. Reduce heat to 325°; bake 45 minutes longer or until a toothpick inserted near the center comes out clean. Cool 10 minutes before inverting onto a wire rack to cool completely. Dust with confectioners’ sugar and garnish with fruit and mint if desired. Yield: 2 cakes (9 cups batter).
