Artichoke Chicken Pasta

Artichoke Chicken Pasta

Ingredients
6 ounces uncooked fettuccine
2 teaspoons all-purpose flour
1/3 cup dry white wine or broth
1/4 cup reduced-sodium chicken broth
3 teaspoons olive oil, divided
1 pound boneless skinless chicken breasts, cut into thin strips
1/2 cup fresh broccoli florets
1/2 cup sliced fresh mushrooms
1/2 cup cherry tomatoes, halved
2 garlic cloves, minced
1 can (14 ounces) water-packed artichoke hearts, drained and halved
1/2 teaspoon salt
1/2 teaspoon dried oregano
1 tablespoon minced fresh parsley
1 tablespoon shredded Parmesan cheese

Directions
Cook fettuccine according to package directions; drain.

Meanwhile, in a small bowl, mix flour, wine and broth until smooth. In a large nonstick skillet coated with cooking spray, heat 2 teaspoons oil over medium heat. Add chicken; cook and stir 2-4 minutes or until no longer pink. Remove from pan.

In same skillet, heat remaining oil over medium-high heat. Add broccoli; cook and stir 2 minutes. Add mushrooms, tomatoes and garlic; cook and stir 2 minutes longer. Stir in artichoke hearts, salt, oregano and flour mixture. Bring to a boil; cook and stir 1-2 minutes or until thickened.

Add fettuccine, chicken and parsley; heat through, tossing to combine. Sprinkle with cheese. Yield: 4 servings.

Onigiri - Japanese Rice Balls

Onigiri – Japanese Rice Balls

Ingredients
4 cups uncooked short-grain white rice
4 1/2 cups water
1 cup water
1/4 teaspoon salt
1/4 cup bonito shavings (dry fish flakes)
2 sheets nori (dry seaweed), cut into 1/2-inch strips
2 tablespoons sesame seeds

Directions

Wash the rice in a mesh strainer until the water runs clear. Combine washed rice and 4 1/2 cups water in a saucepan. Bring to a boil over high heat, stirring occasionally. Reduce heat to low; cover.
Simmer rice until the water is absorbed, 15 to 20 minutes. Let rice rest, for 15 minutes to allow the rice to continue to steam and become tender. Allow cooked rice to cool.

Combine 1 cup water with the salt in a small bowl. Use this water to dampen hands before handling the rice. Divide the cooked rice into 8 equal portions. Use one portion of rice for each onigiri.

Divide one portion of rice in two. Create a dimple in the rice and fill with a heaping teaspoon of bonito flakes. Cover with the remaining portion of rice and press lightly to enclose filling inside rice ball. Gently press the rice to shape into a triangle. Wrap shaped onigiri with a strip of nori. Sprinkle with sesame seeds. Repeat to make a total of 8 onigiri.

Black Forest Ham Roll-Ups

Black Forest Ham Roll-Ups

Ingredients
1 package (8 ounces) cream cheese, softened
2 teaspoons minced fresh parsley
2 teaspoons dried celery flakes
2 teaspoons Dijon mustard
1 teaspoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 cup dried cranberries, chopped
2 green onions, chopped
5 flour tortillas (10 inches), room temperature
1/2 pound thinly sliced Black Forest deli ham
1/2 pound thinly sliced Swiss cheese

Directions
In a small bowl, mix the first seven ingredients until blended. Stir in cranberries and green onions; spread over tortillas. Layer with ham and cheese. Roll up tightly; wrap in plastic wrap. Refrigerate at least 1 hour.

Just before serving, unwrap and cut each tortilla crosswise into 16 slices. Yield: about 6-1/2 dozen.

eggs benedict with cheese sauce

Double-Cheese Eggs Benedict

Ingredients
2 tablespoons butter
2 tablespoons plus 1-1/2 teaspoons all-purpose flour
1-1/2 cups 2% milk
1/4 cup shredded cheddar cheese
2 tablespoons shredded Parmesan cheese
1/2 teaspoon Dijon mustard
1/8 teaspoon salt
1/8 teaspoon white pepper

POACHED EGGS:
1 tablespoon white vinegar
8 eggs
4 English muffins, split and toasted
8 slices Canadian bacon, warmed
8 bacon strips, cooked and crumbled

Directions
For cheese sauce, in a large saucepan, melt butter. Stir in flour until smooth; gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to medium-low. Add the cheese, mustard, salt and pepper, stirring until cheese is melted. Cover and keep warm.

Place 2-3 in. of water in a large skillet with high sides; add vinegar. Bring to a boil; reduce heat and simmer gently. Break cold eggs, one at a time, into a custard cup or saucer; holding the cup close to the surface of the water, slip egg into water.

Cook 4 eggs, uncovered, until whites are completely set, about 4 minutes. With a slotted spoon, lift each egg out of the water. Repeat with remaining eggs.

To assemble, top each muffin half with one slice Canadian bacon, one egg, cheese sauce and bacon. Yield: 8 servings.

Potato Ham Bake

Potato Ham Bake

Ingredients
3 medium potatoes, peeled and thinly sliced
2 cups cubed fully cooked ham
1 medium onion, sliced and separated into rings
8 slices process American cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup frozen peas, thawed

Directions
In a greased 3-qt. baking dish, layer half of the potatoes, ham, onion, cheese and soup. Repeat layers. Cover and bake at 350° for 1-1/4 hours or until potatoes are almost tender.

Sprinkle with peas. Bake, uncovered, for 10 minutes or until heated through. Yield: 6 servings.

Pecan Meltaways

Pecan Meltaways

Ingredients
1 cup butter, softened
1/2 cup confectioners’ sugar
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup chopped pecans
Additional confectioners’ sugar

Directions
In a large bowl, cream butter and confectioners’ sugar until light and fluffy. Beat in vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in pecans. Refrigerate until chilled.

Preheat oven to 350°. Roll into 1-in. balls and place on ungreased baking sheets. Bake 10-12 minutes or until set. Roll warm cookies in additional confectioners’ sugar; cool completely on wire racks. Roll cooled cookies again in confectioners’ sugar. Yield: 4 dozen.

Sausage & Vegetable Skillet Dinner

Ingredients
1 tablespoon olive oil
1 package (12 ounces) fully cooked Italian chicken sausage links, cut into 1-inch pieces
1 large onion, chopped
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
2 pounds red potatoes (about 7 medium), thinly sliced
1 package (10 ounces) frozen corn
1-1/4 cups vegetable broth
1/4 teaspoon pepper
2 cups fresh baby spinach

Directions
In a 12-in. skillet, heat oil over medium-high heat. Add sausage and onion; cook and stir until sausage is browned and onion is tender. Add garlic and pepper flakes; cook 1 minute longer.

Add potatoes, corn, broth and pepper; bring to a boil. Reduce heat; simmer, covered, 12-15 minutes or until potatoes are tender. Add spinach; cook just until wilted. Yield: 4 servings.

Ingredients
1 package (14 ounces) coleslaw mix
3/4 cup mayonnaise
1/3 cup sour cream
1/4 cup sugar
3/4 teaspoon seasoned salt
1/2 teaspoon ground mustard
1/4 teaspoon celery salt

Directions
Place coleslaw mix in a large bowl. In a small bowl, combine the remaining ingredients; stir until blended. Pour over coleslaw mix and toss to coat. Refrigerate until serving. Yield: 6 servings.

Jiffy Cinnamon Rolls

Jiffy Cinnamon Rolls

Ingredients
4 to 5 cups all-purpose flour, divided
1 package (9 ounces) white or yellow cake mix
2 packages (1/4 ounce each) quick-rise yeast
1 teaspoon salt
2 cups warm water (120° to 130°)
2 tablespoons butter
1/2 cup sugar
3 teaspoons ground cinnamon

Directions
In a large bowl, combine 3 cups flour, cake mix, yeast, salt and warm water; beat until smooth. Add enough remaining flour to form a soft dough.

Turn out onto a lightly floured surface; knead until smooth, about 6-8 minutes. Roll dough into an 18-in. x 9-in. rectangle. Spread with butter and sprinkle with sugar and cinnamon.

Roll dough jelly-roll style, starting with the long end. Slice the roll into 1-in. circles; place on greased baking sheets. Cover and let rise in a warm place until doubled, about 15 minutes.

Bake at 350° for 15-18 minutes. Frost if desired. Yield: 18 rolls.

Pepperoni-Sausage Stuffed Pizza

Ingredients
1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°)
2 tablespoons olive oil
1-1/2 teaspoons salt
1 teaspoon sugar
3-1/2 to 4 cups all-purpose flour

FILLING:
2-1/2 cups (10 ounces) shredded part-skim mozzarella cheese, divided
2-1/2 cups (10 ounces) shredded white cheddar cheese, divided
2 tablespoons all-purpose flour
2 teaspoons dried oregano
2 teaspoons dried basil
1/2 teaspoon crushed red pepper flakes
1 pound bulk Italian sausage, cooked and crumbled
1/2 pound sliced fresh mushrooms
1 package (3-1/2 ounces) sliced pepperoni
1 can (15 ounces) pizza sauce
Grated Parmesan cheese, optional

Directions
In a small bowl, dissolve yeast in warm water. In a large bowl, combine oil, salt, sugar, yeast mixture and 1 cup flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough.

Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour.

Preheat oven to 425°. Grease a 13×9-in. baking pan. Punch down dough; divide into three portions. On a lightly floured surface, combine two portions of dough and roll into a 15×11-in. rectangle. Transfer to prepared pan, pressing onto bottom and up sides of pan. Top with 2 cups mozzarella cheese and 2 cups cheddar cheese. Sprinkle with flour, seasonings, cooked sausage, mushrooms and pepperoni.

Roll out remaining dough into a 13×9-in. rectangle. Place dough over filling, crimping edges to seal; prick top with a fork. Sprinkle with remaining cheeses. Bake on a lower oven rack 10 minutes.

Reduce oven setting to 375°. Spread pizza sauce over cheese. Bake 30-35 minutes longer or until edges are lightly browned. Let stand 10 minutes before cutting. If desired, sprinkle with Parmesan cheese. Yield: 12 servings.
