yummy! I made this for Thanksgiving and everyone loved it!
Ratatouille’s Ratatouille
As envisioned by Smitten Kitchen
½ onion, finely chopped
2 garlic cloves, very thinly sliced
1 cup tomato puree (such as Pomi)
2 tablespoons olive oil, divided
1 small eggplant (my store sells these “Italian Eggplant” that are less than half the size of regular ones; it worked perfectly)
1 smallish zucchini
1 smallish yellow squash
1 longish red bell pepper
Few sprigs fresh thyme
Salt and pepper
Few tablespoons soft goat cheese, for serving
Preheat oven to 375 degrees.
Pour tomato puree into bottom of an oval baking dish, approximately 10 inches across the long way. Drop the sliced garlic cloves and chopped onion into the sauce, stir in one tablespoon of the olive oil and season the sauce generously with salt and pepper.
Trim the ends off the eggplant, zucchini and yellow squash. As carefully as you can, trim the ends off the red pepper and remove the core, leaving the edges intact, like a tube.
On a mandoline, adjustable-blade slicer or with a very sharp knife, cut the eggplant, zucchini, yellow squash and red pepper into very thin slices, approximately 1/16-inch thick.
Atop the tomato sauce, arrange slices of prepared vegetables concentrically from the outer edge to the inside of the baking dish, overlapping so just a smidgen of each flat surface is visible, alternating vegetables. You may have a handful leftover that do not fit.
Drizzle the remaining tablespoon olive oil over the vegetables and season them generously with salt and pepper. Remove the leaves from the thyme sprigs with your fingertips, running them down the stem. Sprinkle the fresh thyme over the dish.
Cover dish with a piece of parchment paper cut to fit inside. (Tricky, I know, but the hardest thing about this.)
Bake for approximately 45 to 55 minutes, until vegetables have released their liquid and are clearly cooked, but with some structure left so they are not totally limp. They should not be brown at the edges, and you should see that the tomato sauce is bubbling up around them.
Serve with a dab of soft goat cheese on top, alone, or with some crusty French bread, atop polenta, couscous, or your choice of grain.

Hello I never knew what ratatouille was until I watched the movie. It looks so yummy, and te real life picture you have just makes it look even better. I will definetly attempt to cook it and hopefully showcase what I think is delicious dish. I live in New Zealand at the bottom of the world, and trust me unless they have seen the movie, they wont know what hit them. Most of all hopefully I will do it justice. Will get back to see how it all goes.
Hi! Similar to the person who commented, I had never known what ratatouille was before the movie (though I’d heard of it)…I assumed it was some kind of stew.

I did make this for my family for Christmas dinner, and we all LOVED it! I do recommend it!
At first I looked at the Ratatouill, i thought that it was the mouse’s name but now i think the name is delicious ^-^
The film’s version of ratatouille is a dish called “confit byaldi” that a chef invented specifically at the request of the film’s production team. This version looks really tasty too and I think I’m going to try at home sometime soon.
I have been searching and searching for a recipe that actually looks like the one in the movie! I did’t wanted it to be an authentic French recipe – I wanted it to be authentic to what my 4-year old saw in the movie so that he will be excited to eat it! Thanks for putting this out, we can’t wait to try it!

How is it misleading? Mine looked the same as this picture. And I forgot to take pictures the day I made it as I was quite busy cooking. But mine looked the same.

I made this dish for a dinner party in February to accompany a pork roast with baked pears. Being the movie is one of my favorites, I made 2 trays and reluctantly served it to my guests thinking it was nothing special. There wasn’t a morsel left at the end of the meal and they all were looking for more! When I took a mouthful myself I felt like I was Anton Ego food critic in the movie. The raves were so satisfying I made copies of this recipe for everyone!

I made tomato “puree” with fresh tomatoes. It did not turn out as intended and I feared it was doomed to be a failed recipe.
However, my boyfriend LOVED it. I still think that the “puree” was much more watery than it should have been and it ruined the texture of the vegetables for me, but he ate it all up!
Will attempt to make again, with real tomato puree this time. 🙂

I have a hard time believing a Disney Movie has launched my favorite dish to Popularity, if you ever go to france you will find out its a VERY Common dish,
you cant be living in france without eating ratatouille, dont let the name fool you, (if anything the French should be famous for eating ratatouille and NOT snails or frogs)
there is no rat in this dish (like my american partner claimed because he was afraid to try something new),
even though i had failed at making my first batch of ratatouille (not exactly fail but it did not really have any flavor
i would LOVE to try this version and i hope that the flavors of my child hood invade my mouth and memories once again.
I really like this dish. It’s perfect for the months autumn and september when the ingredients are in the season (really fresh and cheap)
Although my version of this dish didn’t look much like the picture…

I like how you put, “smallish” and “longish”. But, I really need to try this, looks great! I have never tried ratatouille, but it has always seemed good. The movie has always been my favorite since I’ve seen it. I saw some at a buffet, but it looked liked over-spiced crap soup, but i didn’t try it. I don’t remember how many I got out of it but it was like 6-8
My sister invited me to her place for a version of ratatouille just like the one in the movie, but rather than just tomato puree at the bottom, she made a tomato, Italian sausage, and basil sauce to put at the bottom, similar to one you’d put pasta in. On top of the sauce, she put a layer of sliced mushrooms, and then she put the vegetables just like the movie, with olive oil, salt, pepper, and thyme, and then after it was baked, she sprinkled goat cheese crumbles all over the top. I’ll tell ya what, boy… she mad that almost 2 weeks ago, and I’m still thinking about how amazing it was!! I’m rather un-skilled in the cooking arena to say the least, but I loved this dish so much that I’m actually going to try to make it myself. I admit I’ve been hungry for it lately. .X-)
I’ve made this dish twice, once ontop of potatoes, once ontop of polenta. The latter was delish! I grew up on polenta (cornmeal mush and cottage cheese basically) and never thought of using it with a veggie baised dish. The tomato went very nicely with it. A suggestion for the eggplant- if you can’t find a small long one, get a small one and cut the slices into quarters. Works just as well, you will just have more eggplant left than anything else. I’d double up on the rest of the ingredients next time so the other half of the eggplant can be used when you make it again.
Tin foil also is a lovely replacement for parchment paper. Much easier as well, as you can fold the sides of the tin foil to make a good sized piece. Just keep it in the oven a bit longer.

it is amazing some times . I have made this for years and just thought it was a good recipe on top of Spaghetti. as was said in the movie any one could could cook , but not all should attempt . combination are important as well , bit i will make it this way it is attractive . lets see of it is as good as mine . I have not always had what it took to make some recipes but i do well at creating .
TO Any one out there if you dream it Make it , give it a try so what if you have to try again . move on .
With family we have to be adjustable Creative some may say but i don’t like that , wa wa get over it , but DO they like other things .its all about combination’s.? OF YOU CAN GET THEM to eat it in some way or form do it ..
We make the dish as a part of watching the movie as a family (like buying turkish delight to eat while watching Narnia). It turns out great!
